As our entry into the Kansas City cuisine scene, we will specialize on handcrafted gyoza. We strive for an exceptional guest experience in areas other than what we bring to the table, such as relationship, atmosphere, and, most importantly, the memories guests leave with. We strive relentlessly to bring that magical experience to life, with the goal of Chewology being a region-focused, street food-inspired eatery that showcases local foods from Taiwan's streets, providing joy and inspiration along the way.
